Vegetarian Cooking Classes for Winter Term

Learn how to cook healthy vegetarian cuisine in two classes, American Vegetarian I and II, offered through Linn-Benton Community College Albany Community Education winter term.

In the class American Vegetarian I, learn how to make several fun, easy and elegant appetizers such as Sherry mushroom pate and trademark tapenade. Create kohirabi slaw and black bean corn-y-castus salad using fresh, local ingredients, and sample several varieties of vegetarian soups.

The second class, American Vegetarian II, will focus on main dishes such as heart-healthy tofu chili, tempeh with roasted veggies, and Southwest Seitan enchiladas as well as desserts such as velvet vegan chocolate cake, famous fruit pie, and savory hazelnut tart.

Both one-day classes will meet on Sundays from 2 p.m. to 4:50 p.m. at the Albany Senior Center, 489 Water Avenue NW. American Vegetarian I will meet on Jan. 23, and American Vegetarian II will meet on Feb. 6.

Cost for each class is $39 with a $10 lab fee for class one, and $12 lab fee for class two. Seniors age 62 and over receive a 25 percent tuition reduction. For more information or to register, contact LBCC Albany Community Education at 541-917-4840.
